Steps

  1. In a mixing bowl, combine rice flour, turmeric powder, coconut milk, water, and salt. Whisk until smooth and let the batter rest for 10 minutes.
  2. Heat a non-stick pan over medium heat and add 1 tablespoon of oil.
  3. Once the oil is hot, pour a ladle of batter into the pan, swirling to coat the bottom evenly. Cook for about 2 minutes until the edges begin to crisp.
  4. Add a portion of shrimp, bean sprouts, and green onions on one half of the pancake. Cook for another 2-3 minutes until the shrimp turns pink and the pancake is golden brown.
