Ingredients

  • Rice flour - 100 grams
  • Coconut milk - 200 ml
  • Turmeric powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 100 ml
  • Mung beans (soaked and cooked) - 50 grams
  • Shiitake mushrooms (sliced) - 50 grams
  • Bean sprouts - 50 grams
  • Green onions (chopped) - 2 tablespoons
  • Vegetable oil - 3 tablespoons
  • Fresh herbs (mint, cilantro, basil) - a handful
  • Lettuce leaves - for serving
  • Nuoc cham (Vietnamese dipping sauce) - for serving

Steps

  1. In a mixing bowl, combine rice flour, coconut milk, turmeric powder, salt, and water. Whisk until smooth to create the batter.
  2. Let the batter rest for 15 minutes while you prepare the filling.
  3. In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add sliced shiitake mushrooms and cook until softened, about 3-4 minutes.
  4. Add cooked mung beans and bean sprouts to the pan, stirring well. Cook for an additional 2 minutes, then remove from heat.
  5. In a non-stick skillet, add 1 tablespoon of vegetable oil and heat over medium-high heat. Pour in a ladleful of batter, swirling to coat the bottom of the skillet evenly.
  6. Cook for about 2-3 minutes until the edges are crispy, then add a portion of the mushroom and vegetable filling to one side of the pancake.
  7. Fold the pancake in half and cook for another minute until golden brown. Repeat with remaining batter and filling.
  8. Serve pancakes hot on a plate with fresh herbs and lettuce leaves on the side, along with nuoc cham for dipping.
