- Water - 100 ml
- Mung beans (soaked and cooked) - 50 grams
- Shiitake mushrooms (sliced) - 50 grams
- Bean sprouts - 50 grams
- Green onions (chopped) - 2 tablespoons
- Vegetable oil - 3 tablespoons
- Fresh herbs (mint, cilantro, basil) - a handful
- Lettuce leaves - for serving
- Nuoc cham (Vietnamese dipping sauce) - for serving
Steps
- In a mixing bowl, combine rice flour, coconut milk, turmeric powder, salt, and water. Whisk until smooth to create the batter.
- Let the batter rest for 15 minutes while you prepare the filling.
- In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add sliced shiitake mushrooms and cook until softened, about 3-4 minutes.
- Add cooked mung beans and bean sprouts to the pan, stirring well. Cook for an additional 2 minutes, then remove from heat.
- In a non-stick skillet, add 1 tablespoon of vegetable oil and heat over medium-high heat. Pour in a ladleful of batter, swirling to coat the bottom of the skillet evenly.
- Cook for about 2-3 minutes until the edges are crispy, then add a portion of the mushroom and vegetable filling to one side of the pancake.
- Fold the pancake in half and cook for another minute until golden brown. Repeat with remaining batter and filling.
- Serve pancakes hot on a plate with fresh herbs and lettuce leaves on the side, along with nuoc cham for dipping.
