- Turmeric powder - 1 teaspoon
- Coconut milk - 200 ml
- Water - 100 ml
- Salt - 1/2 teaspoon
- Shrimp - 150 grams, peeled and deveined
- Bean sprouts - 100 grams
- Green onions - 2, finely chopped
- Fresh herbs (mint and cilantro) - 30 grams, roughly chopped
- Vegetable oil - 2 tablespoons
Steps
- In a mixing bowl, combine rice flour, turmeric powder, salt, coconut milk, and water to create a smooth batter. Let it rest for 15 minutes.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add a handful of shrimp and cook for 2-3 minutes until they turn pink.
- Pour in a ladleful of the batter over the shrimp, tilting the pan to spread it evenly. Cook for 2-3 minutes until the edges start to crisp.
- Add a handful of bean sprouts and some green onions on one half of the pancake. Fold the pancake over and cook for another minute.
- Transfer the pancake to a plate and repeat the process with the remaining batter and filling ingredients. Serve hot with fresh herbs on the side.
