Ingredients

  • Rice flour - 100 grams
  • Turmeric powder - 1 teaspoon
  • Coconut milk - 200 ml
  • Water - 100 ml
  • Salt - 1/2 teaspoon
  • Shrimp - 150 grams, peeled and deveined
  • Bean sprouts - 100 grams
  • Green onions - 2, finely chopped
  • Fresh herbs (mint and cilantro) - 30 grams, roughly chopped
  • Vegetable oil - 2 tablespoons

Steps

  1. In a mixing bowl, combine rice flour, turmeric powder, salt, coconut milk, and water to create a smooth batter. Let it rest for 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add a handful of shrimp and cook for 2-3 minutes until they turn pink.
  3. Pour in a ladleful of the batter over the shrimp, tilting the pan to spread it evenly. Cook for 2-3 minutes until the edges start to crisp.
  4. Add a handful of bean sprouts and some green onions on one half of the pancake. Fold the pancake over and cook for another minute.
  5. Transfer the pancake to a plate and repeat the process with the remaining batter and filling ingredients. Serve hot with fresh herbs on the side.
