- Bean sprouts - 100 grams
- Mushrooms (shiitake or oyster) - 50 grams, sliced
- Green onions - 2, chopped
- Shrimp (peeled and deveined) - 100 grams
- Vegetable oil - 2 tablespoons
- Lettuce leaves - 4, for wrapping
- Fresh herbs (mint, cilantro) - a handful, for garnish
- Nuoc cham (Vietnamese dipping sauce) - for serving
Steps
- In a mixing bowl, combine rice flour, turmeric powder, coconut milk, water, and salt to create a smooth batter. Let it rest for 10 minutes.
- In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the shrimp and cook until pink, about 2-3 minutes. Remove and set aside.
- In the same skillet, add the sliced mushrooms and sauté for 2-3 minutes until softened. Add the bean sprouts and chopped green onions, stirring for another minute.
- Pour a ladle of the batter into the skillet, swirling to coat the bottom evenly. Cook for 2-3 minutes until the edges are crispy and the top is set.
- Place a portion of the cooked shrimp and vegetable mixture on one half of the pancake. Fold the pancake over and cook for an additional minute until heated through.
- Remove the bánh xèo from the skillet and repeat the process with the remaining batter and filling.
- Serve the bánh xèo warm, wrapped in lettuce leaves with fresh herbs and a side of nuoc cham for dipping.
