- Pork shoulder - 300 grams
- Rice paper wrappers - 8 pieces
- Lettuce leaves - 4 large
- Cilantro - 20 grams
- Mint leaves - 20 grams
- Thai basil - 20 grams
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Hoison sauce - 4 tablespoons
- Peanut butter - 2 tablespoons
- Lime - 1, juiced
- Water - 100 ml
- Garlic - 1 clove, minced
- Chili flakes - 1 teaspoon (optional)
Steps
- Start by cooking the pork shoulder in a pot of boiling water for about 20 minutes, or until fully cooked. Remove from water and let it cool.
- Once cooled, slice the pork into thin strips.
- Prepare the dipping sauce by mixing hoisin sauce, peanut butter, lime juice, minced garlic, and chili flakes in a bowl. Add water gradually until you achieve your desired consistency.
- Soak the rice paper wrappers in warm water for about 10 seconds, or until pliable. Remove and lay it flat on a clean surface.
- Place a lettuce leaf on the lower third of the rice paper, followed by a few slices of pork, some carrot and cucumber, and a few leaves of cilantro, mint, and Thai basil.
- Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top.
- Repeat the process with the remaining ingredients.
- Serve the rolls on a platter with the dipping sauce on the side.
