Ingredients

  • Pork shoulder - 300 grams
  • Rice paper wrappers - 8 pieces
  • Lettuce leaves - 4 large
  • Cilantro - 20 grams
  • Mint leaves - 20 grams
  • Thai basil - 20 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Hoison sauce - 4 tablespoons
  • Peanut butter - 2 tablespoons
  • Lime - 1, juiced
  • Water - 100 ml
  • Garlic - 1 clove, minced
  • Chili flakes - 1 teaspoon (optional)

Steps

  1. Start by cooking the pork shoulder in a pot of boiling water for about 20 minutes, or until fully cooked. Remove from water and let it cool.
  2. Once cooled, slice the pork into thin strips.
  3. Prepare the dipping sauce by mixing hoisin sauce, peanut butter, lime juice, minced garlic, and chili flakes in a bowl. Add water gradually until you achieve your desired consistency.
  4. Soak the rice paper wrappers in warm water for about 10 seconds, or until pliable. Remove and lay it flat on a clean surface.
  5. Place a lettuce leaf on the lower third of the rice paper, followed by a few slices of pork, some carrot and cucumber, and a few leaves of cilantro, mint, and Thai basil.
  6. Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top.
  7. Repeat the process with the remaining ingredients.
  8. Serve the rolls on a platter with the dipping sauce on the side.
