- Cheese (mozzarella or cheddar) - 100 grams, shredded
- Cilantro - 2 tablespoons, chopped
- Vegetable oil - 1 tablespoon for cooking
Steps
- In a bowl, mix minced pork with fish sauce, black pepper, chopped green onions, and red chili. Set aside to marinate for 10 minutes.
- Heat a non-stick skillet over medium heat and add vegetable oil. Once hot, place one rice paper sheet in the skillet.
- Cook the rice paper for about 1 minute until it starts to soften. Spread a portion of the marinated minced pork evenly over the rice paper.
- Crack one egg directly on top of the pork and sprinkle with shredded cheese. Cook for another 2-3 minutes until the pork is cooked through and the egg is set.
- Carefully fold the rice paper in half to form a semi-circle and cook for an additional 1-2 minutes until crispy.
- Remove from the skillet and garnish with chopped cilantro. Repeat the process for the second serving.
