  • Carrot (grated) - 50 grams
  • Cilantro (chopped) - 20 grams
  • Hoison sauce - 2 tablespoons
  • Chili sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. Heat a non-stick skillet over medium heat and add olive oil.
  2. Add the finely chopped mushrooms and sauté for 3-4 minutes until browned.
  3. Stir in the grated carrot and sliced spring onions, cooking for another 2 minutes.
  4. Season the mixture with salt and pepper, then remove from heat and let cool slightly.
  5. Soak one rice paper sheet in warm water for about 10 seconds until pliable, then place it on a flat surface.
  6. Spread a thin layer of the mushroom and vegetable mixture over half of the rice paper.
  7. Crack an egg over the vegetable mixture and sprinkle with chopped cilantro.
  8. Fold the rice paper in half to cover the filling and place it in the skillet.
  9. Cook for 2-3 minutes on each side until the rice paper is crispy and golden brown.
  10. Repeat the process with the remaining rice paper sheets and filling.
  11. Serve hot with hoisin sauce and chili sauce for dipping.
