- Cilantro (chopped) - 20 grams
- Hoison sauce - 2 tablespoons
- Chili sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/4 teaspoon
- Pepper - 1/4 teaspoon
Steps
- Heat a non-stick skillet over medium heat and add olive oil.
- Add the finely chopped mushrooms and sauté for 3-4 minutes until browned.
- Stir in the grated carrot and sliced spring onions, cooking for another 2 minutes.
- Season the mixture with salt and pepper, then remove from heat and let cool slightly.
- Soak one rice paper sheet in warm water for about 10 seconds until pliable, then place it on a flat surface.
- Spread a thin layer of the mushroom and vegetable mixture over half of the rice paper.
- Crack an egg over the vegetable mixture and sprinkle with chopped cilantro.
- Fold the rice paper in half to cover the filling and place it in the skillet.
- Cook for 2-3 minutes on each side until the rice paper is crispy and golden brown.
- Repeat the process with the remaining rice paper sheets and filling.
- Serve hot with hoisin sauce and chili sauce for dipping.
