- Rice paper wrappers - 4 sheets
- Pork loin (thinly sliced) - 200 grams
- Lettuce leaves - 4 large leaves
- Fresh mint leaves - 15 grams
- Fresh cilantro - 15 grams
- Cucumber (julienned) - 100 grams
- Carrot (julienned) - 50 grams
- Hoison sauce - 2 tablespoons
- Peanut butter - 1 tablespoon
- Lime juice - 1 tablespoon
- Garlic (minced) - 1 clove
- Chili flakes (optional) - 1/4 teaspoon
- Water - for soaking rice paper
Steps
- In a pot, bring water to a boil and cook the pork loin slices for about 10 minutes until fully cooked. Remove and let cool.
- While the pork is cooling, prepare the vegetables and herbs by washing and cutting the lettuce, cucumber, and carrot.
- In a bowl, mix hoisin sauce, peanut butter, lime juice, minced garlic, and chili flakes to create a dipping sauce.
- Soak one rice paper wrapper in warm water for about 10-15 seconds until soft and pliable, then place it on a clean surface.
- On the lower third of the rice paper, place one lettuce leaf, a few mint leaves, cilantro, a couple of cucumber sticks, and carrot sticks.
- Add a slice of cooked pork on top of the vegetables.
- Fold the bottom of the rice paper over the filling, then fold the sides in and roll it up tightly to form a spring roll.
- Repeat the process for the remaining wrappers and filling.
- Serve the rolls with the dipping sauce on the side.
