Ingredients

  • Rice paper wrappers - 4 sheets
  • Pork loin (thinly sliced) - 200 grams
  • Lettuce leaves - 4 large leaves
  • Fresh mint leaves - 15 grams
  • Fresh cilantro - 15 grams
  • Cucumber (julienned) - 100 grams
  • Carrot (julienned) - 50 grams
  • Hoison sauce - 2 tablespoons
  • Peanut butter - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Chili flakes (optional) - 1/4 teaspoon
  • Water - for soaking rice paper

Steps

  1. In a pot, bring water to a boil and cook the pork loin slices for about 10 minutes until fully cooked. Remove and let cool.
  2. While the pork is cooling, prepare the vegetables and herbs by washing and cutting the lettuce, cucumber, and carrot.
  3. In a bowl, mix hoisin sauce, peanut butter, lime juice, minced garlic, and chili flakes to create a dipping sauce.
  4. Soak one rice paper wrapper in warm water for about 10-15 seconds until soft and pliable, then place it on a clean surface.
  5. On the lower third of the rice paper, place one lettuce leaf, a few mint leaves, cilantro, a couple of cucumber sticks, and carrot sticks.
  6. Add a slice of cooked pork on top of the vegetables.
  7. Fold the bottom of the rice paper over the filling, then fold the sides in and roll it up tightly to form a spring roll.
  8. Repeat the process for the remaining wrappers and filling.
  9. Serve the rolls with the dipping sauce on the side.
