  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Fresh mint - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Chili pepper - 1 small, sliced (optional)
  • Roasted peanuts - 2 tablespoons, crushed (for garnish)

Steps

  1. In a bowl, combine the sliced pork, minced garlic, fish sauce, sugar, and lime juice. Marinate for at least 15 minutes.
  2. Heat a non-stick skillet over medium heat. Cook the marinated pork for about 5-7 minutes or until fully cooked, then set aside.
  3. Prepare a shallow dish with warm water. Dip one rice paper sheet into the water for about 10 seconds until it softens, then lay it flat on a clean surface.
  4. Place a lettuce leaf in the center of the rice paper, followed by a small amount of cooked pork, cucumber, carrot, mint, cilantro, and sliced chili (if using).
  5. Fold the sides of the rice paper over the filling, then roll from the bottom to create a tight wrap. Repeat this process for the remaining rice paper and fillings.
  6. Serve the rolls fresh, garnished with crushed roasted peanuts and your choice of dipping sauce, such as hoisin or peanut sauce.
