- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Fresh mint - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Chili pepper - 1 small, sliced (optional)
- Roasted peanuts - 2 tablespoons, crushed (for garnish)
Steps
- In a bowl, combine the sliced pork, minced garlic, fish sauce, sugar, and lime juice. Marinate for at least 15 minutes.
- Heat a non-stick skillet over medium heat. Cook the marinated pork for about 5-7 minutes or until fully cooked, then set aside.
- Prepare a shallow dish with warm water. Dip one rice paper sheet into the water for about 10 seconds until it softens, then lay it flat on a clean surface.
- Place a lettuce leaf in the center of the rice paper, followed by a small amount of cooked pork, cucumber, carrot, mint, cilantro, and sliced chili (if using).
- Fold the sides of the rice paper over the filling, then roll from the bottom to create a tight wrap. Repeat this process for the remaining rice paper and fillings.
- Serve the rolls fresh, garnished with crushed roasted peanuts and your choice of dipping sauce, such as hoisin or peanut sauce.
