Ingredients

  • Rice paper wrappers - 4 sheets
  • Rice vermicelli noodles - 100 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1, julienned
  • Fresh mint leaves - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Lettuce leaves - 4 large
  • Peanut butter - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Sesame oil - 1 teaspoon

Steps

  1. Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water to cool.
  2. Prepare all the vegetables by washing and julienning the carrot, cucumber, and red bell pepper.
  3. In a small bowl, mix together the peanut butter, soy sauce, lime juice, and sesame oil to create a dipping sauce.
  4. Soak one rice paper wrapper in warm water for about 20 seconds until soft, then lay it flat on a clean surface.
  5. Place a lettuce leaf in the center of the rice paper, followed by a small amount of noodles, carrots, cucumber, bell pepper, mint, and cilantro.
  6. Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top to form a roll.
  7. Repeat the process with the remaining rice paper wrappers and filling ingredients.
  8. Serve the rolls with the peanut dipping sauce on the side.
