Ingredients

  • Rice paper - 4 sheets
  • Cooked shrimp - 200 grams
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Fresh mint leaves - 1/2 cup
  • Fresh cilantro - 1/2 cup
  • Lettuce leaves - 4 large
  • Peanut butter - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Chili sauce - 1 teaspoon (optional)

Steps

  1. Prepare all vegetables by washing and julienning the cucumber, red bell pepper, and carrot.
  2. In a small bowl, mix together peanut butter, soy sauce, lime juice, and chili sauce to create a dipping sauce.
  3. Fill a shallow dish with warm water and dip one rice paper sheet into the water for about 10-15 seconds until it softens.
  4. Lay the softened rice paper on a clean surface and place one lettuce leaf in the center.
  5. Add a few pieces of shrimp, a handful of cucumber, bell pepper, carrot, mint, and cilantro on top of the lettuce leaf.
  6. Fold the sides of the rice paper over the filling, then roll from the bottom up to enclose the filling tightly.
  7. Repeat the process with the remaining rice paper sheets and filling ingredients.
  8. Serve the Bánh Tráng with the dipping sauce on the side.
