- Rice paper - 4 sheets
- Cooked shrimp - 200 grams
- Cucumber - 1 medium, julienned
- Red bell pepper - 1 medium, julienned
- Carrot - 1 medium, julienned
- Fresh mint leaves - 1/2 cup
- Fresh cilantro - 1/2 cup
- Lettuce leaves - 4 large
- Peanut butter - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Chili sauce - 1 teaspoon (optional)
Steps
- Prepare all vegetables by washing and julienning the cucumber, red bell pepper, and carrot.
- In a small bowl, mix together peanut butter, soy sauce, lime juice, and chili sauce to create a dipping sauce.
- Fill a shallow dish with warm water and dip one rice paper sheet into the water for about 10-15 seconds until it softens.
- Lay the softened rice paper on a clean surface and place one lettuce leaf in the center.
- Add a few pieces of shrimp, a handful of cucumber, bell pepper, carrot, mint, and cilantro on top of the lettuce leaf.
- Fold the sides of the rice paper over the filling, then roll from the bottom up to enclose the filling tightly.
- Repeat the process with the remaining rice paper sheets and filling ingredients.
- Serve the Bánh Tráng with the dipping sauce on the side.
