- Glutinous rice - 200 grams
- Coconut milk - 150 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Mushrooms - 100 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Fresh basil - 10 leaves, chopped
- Nutritional yeast - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Avocado - 1, sliced (for topping)
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the rice and mix it with coconut milk, salt, and black pepper. Let it sit for 10 minutes.
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add diced red bell pepper, zucchini, and mushrooms to the skillet. Cook for 5-7 minutes until softened. Add cherry tomatoes and cook for an additional 2 minutes.
- Stir in chopped basil, nutritional yeast, soy sauce, and lime juice. Remove from heat.
- In a round baking dish, press the soaked and seasoned rice mixture evenly into the bottom to form a crust.
- Spread the vegetable mixture over the rice crust evenly.
- Bake in the preheated oven for 25-30 minutes until the crust is firm and slightly golden.
- Remove from the oven and let it cool for 5 minutes. Top with sliced avocado before serving.
