Ingredients

  • Glutinous rice - 200 grams
  • Coconut milk - 150 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Mushrooms - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil - 10 leaves, chopped
  • Nutritional yeast - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Avocado - 1, sliced (for topping)

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the rice and mix it with coconut milk, salt, and black pepper. Let it sit for 10 minutes.
  3. Preheat the oven to 200°C (400°F).
  4. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add diced red bell pepper, zucchini, and mushrooms to the skillet. Cook for 5-7 minutes until softened. Add cherry tomatoes and cook for an additional 2 minutes.
  6. Stir in chopped basil, nutritional yeast, soy sauce, and lime juice. Remove from heat.
  7. In a round baking dish, press the soaked and seasoned rice mixture evenly into the bottom to form a crust.
  8. Spread the vegetable mixture over the rice crust evenly.
  9. Bake in the preheated oven for 25-30 minutes until the crust is firm and slightly golden.
  10. Remove from the oven and let it cool for 5 minutes. Top with sliced avocado before serving.
