Ingredients

  • Glutinous rice - 200 grams
  • Mung beans (split) - 100 grams
  • Coconut milk - 100 milliliters
  • Coconut sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Banana leaves - 4 large pieces (for wrapping)
  • Water - 500 milliliters

Steps

  1. Soak the glutinous rice in water for at least 4 hours or overnight.
  2. Soak the mung beans in water for 2 hours, then drain.
  3. In a pot, cook the mung beans with 200 milliliters of water until soft, about 15-20 minutes. Mash the beans and mix in 25 grams of coconut sugar and a pinch of salt. Set aside to cool.
  4. Drain the soaked glutinous rice and mix it with 75 milliliters of coconut milk and a pinch of salt. Let it sit for 15 minutes.
  5. Prepare the banana leaves by cutting them into 20x20 cm squares and briefly steaming them to make them pliable.
  6. On a banana leaf, place a portion of glutinous rice (about 2 tablespoons) and flatten it into a rectangle. Add a spoonful of the mung bean mixture in the center, then cover it with another layer of glutinous rice.
  7. Fold the banana leaf over the filling to create a tight rectangle, ensuring the filling is completely enclosed. Repeat with the remaining ingredients.
  8. Place the wrapped cakes in a pot of boiling water and steam for 60 minutes, ensuring they are submerged. Check occasionally and add more water if necessary.
  9. Once cooked, carefully remove the cakes from the pot and let them cool before unwrapping and serving.
