- Mung beans, soaked and cooked - 100 grams
- Banana, sliced - 1 medium
- Pandan leaves - 2 leaves (optional, for aroma)
- Sesame seeds, toasted - 2 tablespoons
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the rice and mix it with coconut milk, sugar, and salt, ensuring all grains are coated.
- In a separate bowl, mash the cooked mung beans until smooth, and mix in a pinch of salt and a tablespoon of sugar. Set aside.
- Preheat the oven to 180°C (350°F).
- In a baking dish, layer half of the glutinous rice mixture evenly at the bottom.
- Spread the mung bean mixture over the rice layer, then add the sliced bananas on top.
- Cover the banana layer with the remaining glutinous rice mixture, smoothing it out to ensure even baking.
- If using, tie the pandan leaves into a knot and place them on top for added aroma.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the rice is cooked through.
- Let it cool for a few minutes, then sprinkle with toasted sesame seeds before serving.
