- Cauliflower rice - 300g
- Coconut cream - 200ml
- Pork belly - 150g, diced
- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Fish sauce - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Banana leaves - 4 large pieces (for wrapping)
Steps
- Prepare the banana leaves by briefly steaming them to make them pliable.
- In a skillet, sauté the shallots and garlic until fragrant, then add the diced pork belly and cook until browned.
- Stir in the fish sauce, salt, and black pepper, then set the pork mixture aside to cool.
- In a large bowl, combine the cauliflower rice and coconut cream, mixing well until thoroughly combined.
- Lay out two pieces of banana leaves in a cross shape, then place half of the cauliflower mixture in the center, pressing it down to form a rectangle.
- Add half of the pork mixture on top of the cauliflower layer, then cover with the remaining cauliflower mixture, shaping it into a rectangle.
- Fold the banana leaves over the filling to create a tight package, securing it with kitchen twine or toothpicks if necessary.
- Repeat the process with the remaining ingredients to form a second bánh tét.
- Place the wrapped bánh tét in a steamer and steam for about 60 minutes until cooked through.
- Remove from the steamer, unwrap, and slice to serve.
