Ingredients

  • Cauliflower rice - 300g
  • Coconut cream - 200ml
  • Pork belly - 150g, diced
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Fish sauce - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Banana leaves - 4 large pieces (for wrapping)

Steps

  1. Prepare the banana leaves by briefly steaming them to make them pliable.
  2. In a skillet, sauté the shallots and garlic until fragrant, then add the diced pork belly and cook until browned.
  3. Stir in the fish sauce, salt, and black pepper, then set the pork mixture aside to cool.
  4. In a large bowl, combine the cauliflower rice and coconut cream, mixing well until thoroughly combined.
  5. Lay out two pieces of banana leaves in a cross shape, then place half of the cauliflower mixture in the center, pressing it down to form a rectangle.
  6. Add half of the pork mixture on top of the cauliflower layer, then cover with the remaining cauliflower mixture, shaping it into a rectangle.
  7. Fold the banana leaves over the filling to create a tight package, securing it with kitchen twine or toothpicks if necessary.
  8. Repeat the process with the remaining ingredients to form a second bánh tét.
  9. Place the wrapped bánh tét in a steamer and steam for about 60 minutes until cooked through.
  10. Remove from the steamer, unwrap, and slice to serve.
