Ingredients
- Glutinous rice - 200 grams
- Coconut milk - 100 ml
- Salt - 1/2 teaspoon
- Ground pork - 150 grams
- Garlic - 2 cloves, minced
- Shallots - 1, finely chopped
- Black pepper - 1/2 teaspoon
- Fish sauce - 1 tablespoon
- Egg - 1, beaten
- Lettuce leaves - 2
- Cucumber - 1/2, sliced
- Fresh cilantro - 30 grams
- Chili sauce - 30 ml
Steps
- Soak the glutinous rice in water for at least 4 hours or overnight, then drain.
- In a bowl, mix the soaked rice with coconut milk and salt, then set aside for 30 minutes.
- In a skillet, heat a little oil over medium heat, add minced garlic and chopped shallots, and sauté until fragrant.
- Add ground pork to the skillet, season with black pepper and fish sauce, and cook until browned. Remove from heat and let it cool slightly.
- Combine the cooked pork mixture with the beaten egg in a bowl and mix well to form the patty mixture.
- In a steamer, layer banana leaves or parchment paper, and spread half of the glutinous rice mixture into the bottom, then place the pork patty mixture on top, and cover with the remaining rice mixture.
- Steam the entire mixture for about 25-30 minutes until the rice is cooked through.
- Once cooled, slice the steamed rice cake into burger-sized rounds.
- To assemble, place a rice cake round on a plate, top with lettuce, cucumber slices, fresh cilantro, and a drizzle of chili sauce, then cap with another rice cake round.
