Steps

  1. Preheat your oven to 180°C (350°F).
  2. Soak the rice noodles in warm water for about 15 minutes until softened, then drain and set aside.
  3. In a skillet, heat the vegetable oil over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant.
  4. Add the ground chicken to the skillet and cook until browned. Stir in the soy sauce, fish sauce, black pepper, and sugar, mixing well.
  5. In a large bowl, combine the softened rice noodles with the chicken mixture and coconut milk. Mix until evenly combined.
  6. Transfer the mixture to a greased baking dish and spread it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  8. Remove from the oven, garnish with chopped green onions and crushed peanuts, and serve with fresh herbs.
