Steps
- Preheat your oven to 180°C (350°F).
- Soak the rice noodles in warm water for about 15 minutes until softened, then drain and set aside.
- In a skillet, heat the vegetable oil over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant.
- Add the ground chicken to the skillet and cook until browned. Stir in the soy sauce, fish sauce, black pepper, and sugar, mixing well.
- In a large bowl, combine the softened rice noodles with the chicken mixture and coconut milk. Mix until evenly combined.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
- Remove from the oven, garnish with chopped green onions and crushed peanuts, and serve with fresh herbs.
