Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 30 grams
  • Water - 200 milliliters
  • Salt - 1/2 teaspoon
  • Shrimp, peeled and deveined - 200 grams
  • Green onions, finely chopped - 2 tablespoons
  • Garlic, minced - 1 clove
  • Black pepper - 1/4 teaspoon
  • Sesame oil - 1 tablespoon
  • Cilantro, chopped - 2 tablespoons
  • Lime wedges - for serving

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, salt, and water. Stir until smooth and let it rest for 10 minutes.
  2. In a skillet, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add shrimp, black pepper, and half of the green onions to the skillet. Cook until shrimp turn pink, about 3-4 minutes.
  4. Preheat a non-stick frying pan over medium heat. Pour a ladle of the rice flour mixture into the pan, spreading it evenly to form a base.
  5. Add a portion of the cooked shrimp mixture on top of the rice flour base. Sprinkle with chopped cilantro and remaining green onions.
  6. Cook for 5-7 minutes until the edges are crispy and the base is golden brown. Carefully flip to cook the other side for an additional 3-4 minutes.
  7. Repeat with the remaining batter and shrimp mixture. Serve hot with lime wedges on the side.
