Ingredients

  • Shirataki noodles - 200 grams
  • Coconut milk - 200 ml
  • Shrimp, peeled and deveined - 100 grams
  • Garlic, minced - 2 cloves
  • Green onions, chopped - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Stevia or erythritol - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the Shirataki noodles under cold water and drain them well. Set aside.
  2. In a medium saucepan, heat the coconut milk over medium heat until it begins to simmer.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the shrimp and cook for 3-4 minutes until they turn pink and opaque.
  5. Add the fish sauce, lime juice, stevia or erythritol, salt, black pepper, and chili flakes to the coconut milk mixture. Cook for another 2-3 minutes to combine the flavors.
  6. In a separate pot, bring water to a boil and add the Shirataki noodles. Cook for 2-3 minutes, then drain and rinse again.
  7. Divide the noodles into two bowls and pour the coconut shrimp sauce over the top.
  8. Garnish with chopped green onions and fresh cilantro before serving.
