Ingredients
- Shirataki noodles - 200 grams
- Coconut milk - 200 ml
- Shrimp, peeled and deveined - 100 grams
- Garlic, minced - 2 cloves
- Green onions, chopped - 2 tablespoons
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Stevia or erythritol - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Chili flakes - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the Shirataki noodles under cold water and drain them well. Set aside.
- In a medium saucepan, heat the coconut milk over medium heat until it begins to simmer.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the shrimp and cook for 3-4 minutes until they turn pink and opaque.
- Add the fish sauce, lime juice, stevia or erythritol, salt, black pepper, and chili flakes to the coconut milk mixture. Cook for another 2-3 minutes to combine the flavors.
- In a separate pot, bring water to a boil and add the Shirataki noodles. Cook for 2-3 minutes, then drain and rinse again.
- Divide the noodles into two bowls and pour the coconut shrimp sauce over the top.
- Garnish with chopped green onions and fresh cilantro before serving.
