Ingredients

  • Rice flour - 200g
  • Tapioca starch - 50g
  • Salt - 1/2 tsp
  • Water - 250ml
  • Ground pork - 250g
  • Garlic - 2 cloves, minced
  • Shallot - 1 small, finely chopped
  • Fish sauce - 1 tbsp
  • Black pepper - 1/2 tsp
  • Cucumber - 1, thinly sliced
  • Fresh cilantro - 20g, chopped
  • Fresh mint - 20g, chopped
  • Lettuce leaves - 4, for serving
  • Chili sauce - to taste

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, salt, and water to form a smooth batter. Let it rest for 15 minutes.
  2. Meanwhile, in a separate bowl, mix ground pork with minced garlic, chopped shallot, fish sauce, and black pepper.
  3. Heat a non-stick skillet over medium heat and shape the pork mixture into small patties. Cook for about 4-5 minutes on each side until fully cooked and browned.
  4. While the patties are cooking, prepare the bánh tằm. Bring a pot of water to a boil, then pour in the rested batter through a sieve or fine mesh to create thin noodle strands. Cook for 2-3 minutes until they float to the surface, then remove and rinse under cold water.
  5. To assemble the burger, place a layer of lettuce on a plate, followed by a portion of the cooked bánh tằm, a pork patty, sliced cucumber, chopped cilantro, and mint. Drizzle with chili sauce to taste.
  6. Repeat the assembly for the second serving and enjoy your unique Bánh Tằm Burger!
