- Fresh mint - 2 tablespoons, chopped
- Chili peppers - 1, sliced (optional)

Steps
- Prepare konjac noodles according to package instructions, usually by rinsing and boiling them briefly.
- In a bowl, mix shredded pork belly, pork skin, fish sauce, lime juice, minced garlic, salt, and half of the cilantro and mint. Let it marinate for 10 minutes.
- In a saucepan over low heat, combine the coconut milk and the marinated pork mixture, stirring occasionally until heated through, about 5-7 minutes.
