Ingredients

  • Pork skin - 50 grams, shredded
  • Coconut milk - 100 ml
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Chili peppers - 1, sliced (optional)
  • Crushed peanuts - 2 tablespoons (optional)
  • Salt - to taste

Steps

  1. Prepare konjac noodles according to package instructions, usually by rinsing and boiling them briefly.
  2. In a bowl, mix shredded pork belly, pork skin, fish sauce, lime juice, minced garlic, salt, and half of the cilantro and mint. Let it marinate for 10 minutes.
  3. In a saucepan over low heat, combine the coconut milk and the marinated pork mixture, stirring occasionally until heated through, about 5-7 minutes.
  4. To serve, place a portion of konjac noodles in a bowl, top with the coconut milk and pork mixture, and garnish with remaining cilantro, mint, sliced chili peppers, and crushed peanuts if using.
