Ingredients

  • Sweet potato - 200 grams, peeled and grated
  • Rice flour - 100 grams
  • Tapioca flour - 50 grams
  • Cold water - 200 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Shrimp - 200 grams, peeled and deveined
  • Green onions - 2 stalks, finely chopped
  • Vegetable oil - 500 ml, for frying

Steps

  1. In a bowl, combine grated sweet potato, rice flour, tapioca flour, cold water, salt, and black pepper. Mix until a smooth batter forms.
  2. Add the shrimp and chopped green onions to the batter and mix well to coat the shrimp evenly.
  3. Heat vegetable oil in a deep pan over medium heat until hot.
  4. Using a ladle, pour a portion of the batter into the hot oil, making sure to include some shrimp in each fritter.
  5. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
  6. Remove the fritters from the oil and drain on paper towels to remove excess oil.
  7. Serve hot with a dipping sauce made from soy sauce, lime juice, and chopped chili, if desired.
