- Sweet potato - 200 grams, peeled and grated
- Rice flour - 100 grams
- Tapioca flour - 50 grams
- Cold water - 200 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Shrimp - 200 grams, peeled and deveined
- Green onions - 2 stalks, finely chopped
- Vegetable oil - 500 ml, for frying
Steps
- In a bowl, combine grated sweet potato, rice flour, tapioca flour, cold water, salt, and black pepper. Mix until a smooth batter forms.
- Add the shrimp and chopped green onions to the batter and mix well to coat the shrimp evenly.
- Heat vegetable oil in a deep pan over medium heat until hot.
- Using a ladle, pour a portion of the batter into the hot oil, making sure to include some shrimp in each fritter.
- Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
- Remove the fritters from the oil and drain on paper towels to remove excess oil.
- Serve hot with a dipping sauce made from soy sauce, lime juice, and chopped chili, if desired.
