- Rice flour - 100 grams
- Tapioca starch - 50 grams
- Water - 200 ml
- Salt - 1/2 teaspoon
- Shrimp - 100 grams, peeled and deveined
- Garlic - 2 cloves, minced
- Lettuce leaves - 4 leaves
- Cucumber - 1/2, julienned
- Carrot - 1/2, julienned
- Fresh mint leaves - 10 grams
- Fresh cilantro - 10 grams
- Lime - 1, cut into wedges
- Fish sauce - 1 tablespoon
- Chili sauce - 1 teaspoon (optional)
Steps
- In a mixing bowl, combine rice flour, tapioca starch, salt, and water. Stir until smooth to create the batter.
- Grease a steaming tray and pour a thin layer of the batter into the tray. Steam for about 10 minutes until set.
- Remove the steamed layer and repeat until all batter is used up, creating multiple layers.
- In a pan, heat a small amount of oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the shrimp to the pan and cook until pink and cooked through, about 3-4 minutes. Remove from heat.
- Cut the steamed rice noodle layers into strips and place them on a serving plate.
- Top the noodles with sautéed shrimp, julienned cucumber, carrot, and fresh herbs.
- Serve with lime wedges and a side of fish sauce mixed with chili sauce for dipping.
