Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 50 grams
  • Water - 200 ml
  • Salt - 1/2 teaspoon
  • Shrimp - 100 grams, peeled and deveined
  • Garlic - 2 cloves, minced
  • Lettuce leaves - 4 leaves
  • Cucumber - 1/2, julienned
  • Carrot - 1/2, julienned
  • Fresh mint leaves - 10 grams
  • Fresh cilantro - 10 grams
  • Lime - 1, cut into wedges
  • Fish sauce - 1 tablespoon
  • Chili sauce - 1 teaspoon (optional)

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, salt, and water. Stir until smooth to create the batter.
  2. Grease a steaming tray and pour a thin layer of the batter into the tray. Steam for about 10 minutes until set.
  3. Remove the steamed layer and repeat until all batter is used up, creating multiple layers.
  4. In a pan, heat a small amount of oil over medium heat. Add minced garlic and sauté until fragrant.
  5. Add the shrimp to the pan and cook until pink and cooked through, about 3-4 minutes. Remove from heat.
  6. Cut the steamed rice noodle layers into strips and place them on a serving plate.
  7. Top the noodles with sautéed shrimp, julienned cucumber, carrot, and fresh herbs.
  8. Serve with lime wedges and a side of fish sauce mixed with chili sauce for dipping.
