- Konjac flour - 100 grams
- Water - 200 ml
- Coconut milk - 100 ml
- Shrimp - 100 grams, peeled and deveined
- Egg - 1 large
- Garlic - 2 cloves, minced
- Fish sauce - 1 tablespoon
- Lime - 1, juiced
- Fresh cilantro - 10 grams, chopped
- Fresh mint - 10 grams, chopped
- Chili pepper - 1, sliced (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, mix konjac flour with water until a smooth dough forms. Let it sit for 10 minutes.
- Bring a pot of water to a boil. Shape the konjac dough into thin noodle strands and drop them into the boiling water. Cook for about 5-7 minutes until they float.
- In a separate pan, heat a tablespoon of oil over medium heat and sauté minced garlic until fragrant. Add shrimp and cook until pink, about 3-4 minutes.
- In another small saucepan, combine coconut milk, fish sauce, lime juice, salt, and pepper. Simmer for 5 minutes, stirring occasionally.
- In a small bowl, whisk the egg and scramble it in a non-stick pan until fully cooked. Set aside.
- Drain the noodles and rinse under cold water to stop the cooking process. Serve the noodles in bowls, topped with the sautéed shrimp, scrambled egg, fresh cilantro, mint, and chili pepper slices.
