- Shrimp (peeled and deveined) - 150 grams
- Sweet potato (grated) - 100 grams
- Rice flour - 50 grams
- Cornstarch - 25 grams
- Green onions (finely chopped) - 2 tablespoons
- Garlic (minced) - 1 clove
- Water - 100 ml
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Coconut oil (for frying) - 2 tablespoons
Steps
- In a mixing bowl, combine the rice flour, cornstarch, salt, and pepper.
- Gradually add water to the dry ingredients, stirring until a smooth batter forms.
- Fold in the grated sweet potato, minced garlic, and chopped green onions.
- Heat the coconut oil in a non-stick skillet over medium heat.
- Once hot, add a spoonful of the batter, pressing down slightly to flatten it.
- Place 3-4 shrimp on top of each fritter and cover with a little more batter.
- Fry for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and place on paper towels to drain excess oil.
- Serve warm with a dipping sauce made from fish sauce, lime juice, and chili.
