Ingredients

  • Shrimp (peeled and deveined) - 150 grams
  • Sweet potato (grated) - 100 grams
  • Rice flour - 50 grams
  • Cornstarch - 25 grams
  • Green onions (finely chopped) - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Water - 100 ml
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Coconut oil (for frying) - 2 tablespoons

Steps

  1. In a mixing bowl, combine the rice flour, cornstarch, salt, and pepper.
  2. Gradually add water to the dry ingredients, stirring until a smooth batter forms.
  3. Fold in the grated sweet potato, minced garlic, and chopped green onions.
  4. Heat the coconut oil in a non-stick skillet over medium heat.
  5. Once hot, add a spoonful of the batter, pressing down slightly to flatten it.
  6. Place 3-4 shrimp on top of each fritter and cover with a little more batter.
  7. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
  8. Remove from the skillet and place on paper towels to drain excess oil.
  9. Serve warm with a dipping sauce made from fish sauce, lime juice, and chili.
