- Rice flour - 100 grams
- Water - 250 ml
- Garlic - 4 cloves, minced
- Scallions - 2 stalks, chopped
- Carrot - 1 medium, grated
- Cabbage - 100 grams, shredded
- Fresh cilantro - 15 grams, chopped
- Soy sauce - 1 tablespoon
- Cooking oil - 3 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the rice flour, water, salt, and black pepper to create a smooth batter. Let it rest for 10 minutes.
- Meanwhile, heat 1 tablespoon of cooking oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the grated carrot and shredded cabbage to the skillet, and stir-fry for about 3-4 minutes until slightly softened. Add the chopped scallions and cilantro, then mix in the soy sauce. Remove from heat.
- After the batter has rested, gently fold the vegetable mixture into the batter until well combined.
- Wipe the skillet clean and add 1 tablespoon of cooking oil over medium heat. Pour half of the batter into the skillet, spreading it evenly.
- Cook for about 5-6 minutes until the edges are crispy and the bottom is golden brown. Carefully flip and cook for another 3-4 minutes on the other side.
- Repeat with the remaining batter, adding more oil as needed. Serve hot with a dipping sauce of your choice.
