Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 50 grams
  • Mung beans - 50 grams
  • Minced pork - 100 grams
  • Shallots - 2, finely chopped
  • Vegetable oil - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 250 milliliters

Steps

  1. Soak the mung beans in water for at least 2 hours or overnight, then drain.
  2. Steam the soaked mung beans for about 15 minutes until tender, then mash and set aside.
  3. In a pan, heat the vegetable oil over medium heat, add the chopped shallots, and sauté until golden brown.
  4. Add the minced pork to the pan, seasoning with fish sauce, salt, and black pepper. Cook until the pork is fully cooked and well combined with the shallots.
  5. In a mixing bowl, combine the rice flour, tapioca starch, and water to create a smooth batter.
  6. Prepare small pieces of banana leaves or parchment paper, and lightly oil them.
  7. Pour a spoonful of the batter onto the prepared leaf/paper, add a spoonful of the mung bean filling followed by a spoonful of the pork mixture, then cover with another spoonful of batter.
  8. Repeat the process until all ingredients are used up.
  9. Steam the cakes in a steamer for about 20-25 minutes until set and firm.
  10. Serve warm, garnished with fresh herbs or chili sauce if desired.
