Ingredients
- Rice flour - 100 grams
- Tapioca starch - 50 grams
- Mung beans - 50 grams
- Minced pork - 100 grams
- Shallots - 2, finely chopped
- Vegetable oil - 1 tablespoon
- Fish sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 250 milliliters
Steps
- Soak the mung beans in water for at least 2 hours or overnight, then drain.
- Steam the soaked mung beans for about 15 minutes until tender, then mash and set aside.
- In a pan, heat the vegetable oil over medium heat, add the chopped shallots, and sauté until golden brown.
- Add the minced pork to the pan, seasoning with fish sauce, salt, and black pepper. Cook until the pork is fully cooked and well combined with the shallots.
- In a mixing bowl, combine the rice flour, tapioca starch, and water to create a smooth batter.
- Prepare small pieces of banana leaves or parchment paper, and lightly oil them.
- Pour a spoonful of the batter onto the prepared leaf/paper, add a spoonful of the mung bean filling followed by a spoonful of the pork mixture, then cover with another spoonful of batter.
- Repeat the process until all ingredients are used up.
- Steam the cakes in a steamer for about 20-25 minutes until set and firm.
- Serve warm, garnished with fresh herbs or chili sauce if desired.
