- Rice flour - 150 grams
- Warm water - 200 ml
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Red bell pepper - 1/2, sliced
- Zucchini - 1 small, sliced
- Carrot - 1 small, grated
- Mushrooms - 100 grams, sliced
- Fresh cilantro - a handful, chopped
- Soy sauce - 2 tablespoons
- Chili paste - 1 teaspoon (optional)
- Lime - 1, juiced
Steps
- In a mixing bowl, combine rice flour, salt, and warm water to create a smooth batter. Let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add olive oil. Sauté minced garlic until fragrant, about 1 minute.
- Add sliced bell pepper, zucchini, grated carrot, and mushrooms to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender. Add soy sauce and chili paste if using, and remove from heat.
- In the same skillet, pour half of the batter to form a round base, about 1 cm thick. Cook for 3-4 minutes until the bottom is golden brown, then flip and cook for another 3-4 minutes on the other side.
- Repeat the process with the remaining batter to make a second bánh pizza.
- Top each bánh pizza with the stir-fried vegetables and sprinkle with fresh cilantro and lime juice before serving.
