Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 milliliters
  • Coconut milk - 100 milliliters
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil - 10 leaves, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chili flakes - 1/4 teaspoon (optional)
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Drain the rice and blend it with 300ml of water and 100ml of coconut milk until smooth.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour the rice mixture into the skillet and spread it evenly, cooking for about 10-15 minutes until the bottom is crispy and golden.
  4. While the crust is cooking, prepare the toppings. In a separate pan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the diced red bell pepper and zucchini to the pan. Sauté for 5-7 minutes until the vegetables are tender. Stir in the halved cherry tomatoes, chopped basil, oregano, salt, black pepper, and chili flakes (if using). Cook for an additional 2-3 minutes and remove from heat.
  6. Once the rice crust is ready, carefully flip it using a large plate or spatula. Cook the other side for another 5-7 minutes until crispy.
  7. Top the crispy rice crust with the sautéed vegetable mixture, drizzling with balsamic vinegar before serving.
  8. Slice and serve warm, garnished with additional fresh basil if desired.
