Ingredients
- Jasmine rice - 150 grams
- Water - 300 milliliters
- Coconut milk - 100 milliliters
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Cherry tomatoes - 100 grams, halved
- Fresh basil - 10 leaves, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chili flakes - 1/4 teaspoon (optional)
- Balsamic vinegar - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- Drain the rice and blend it with 300ml of water and 100ml of coconut milk until smooth.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour the rice mixture into the skillet and spread it evenly, cooking for about 10-15 minutes until the bottom is crispy and golden.
- While the crust is cooking, prepare the toppings. In a separate pan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the pan. Sauté for 5-7 minutes until the vegetables are tender. Stir in the halved cherry tomatoes, chopped basil, oregano, salt, black pepper, and chili flakes (if using). Cook for an additional 2-3 minutes and remove from heat.
- Once the rice crust is ready, carefully flip it using a large plate or spatula. Cook the other side for another 5-7 minutes until crispy.
- Top the crispy rice crust with the sautéed vegetable mixture, drizzling with balsamic vinegar before serving.
- Slice and serve warm, garnished with additional fresh basil if desired.
