- Rice noodles - 150 grams

- Ground chicken or turkey - 200 grams
- Red bell pepper - 1, diced
- Mushrooms - 100 grams, sliced
- Carrot - 1, julienned
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Fresh basil - 15 grams, chopped
- Fresh cilantro - 15 grams, chopped
- Mozzarella cheese - 100 grams, shredded
- Chili flakes - 1 teaspoon
- Lime - 1, cut into wedges for serving
Steps
- Cook rice noodles according to package instructions, drain, and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add ground chicken or turkey to the skillet, cooking until browned and fully cooked, about 5-7 minutes.
- Stir in the diced red bell pepper, sliced mushrooms, and julienned carrot. Sauté for an additional 3-4 minutes until vegetables are tender.
- Add soy sauce, fish sauce, and half of the green onions. Mix well and remove from heat.
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine cooked rice noodles with the sautéed mixture. Press this mixture into a greased pizza pan or baking sheet to form a crust.
- Sprinkle shredded mozzarella cheese evenly on top of the crust.
- Bake in the preheated oven for 12-15 minutes until the cheese is melted and the crust is slightly crispy.
- Remove from the oven and garnish with fresh basil, cilantro, remaining green onions, and chili flakes.
- Serve with lime wedges on the side.
