Ingredients

  • Rice noodles - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground chicken or turkey - 200 grams
  • Red bell pepper - 1, diced
  • Mushrooms - 100 grams, sliced
  • Carrot - 1, julienned
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Fresh basil - 15 grams, chopped
  • Fresh cilantro - 15 grams, chopped
  • Mozzarella cheese - 100 grams, shredded
  • Chili flakes - 1 teaspoon
  • Lime - 1, cut into wedges for serving

Steps

  1. Cook rice noodles according to package instructions, drain, and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add ground chicken or turkey to the skillet, cooking until browned and fully cooked, about 5-7 minutes.
  4. Stir in the diced red bell pepper, sliced mushrooms, and julienned carrot. Sauté for an additional 3-4 minutes until vegetables are tender.
  5. Add soy sauce, fish sauce, and half of the green onions. Mix well and remove from heat.
  6. Preheat your oven to 200°C (400°F).
  7. In a large bowl, combine cooked rice noodles with the sautéed mixture. Press this mixture into a greased pizza pan or baking sheet to form a crust.
  8. Sprinkle shredded mozzarella cheese evenly on top of the crust.
  9. Bake in the preheated oven for 12-15 minutes until the cheese is melted and the crust is slightly crispy.
  10. Remove from the oven and garnish with fresh basil, cilantro, remaining green onions, and chili flakes.
  11. Serve with lime wedges on the side.
