  • Soy sauce - 1 tbsp
  • Chili flakes - 1/2 tsp (optional)
  • Green onions - 2 stalks, chopped

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, water, and salt to create a smooth batter. Let it rest for 10 minutes.
  2. In a non-stick skillet, heat 1 tablespoon of vegetable oil over medium heat. Add minced garlic and sliced onions, sautéing until fragrant and translucent.
  3. Add bell pepper and mushrooms to the skillet, cooking for another 5 minutes until they soften. Stir in cherry tomatoes and cook for an additional 2 minutes. Season with soy sauce and chili flakes if using, then remove from heat.
  4. In a separate non-stick or well-greased skillet, pour half of the batter and spread it evenly to form a thin crust. Cook for about 4-5 minutes until the bottom is golden brown and crispy.
  5. Carefully flip the crust and layer half of the vegetable mix on top. Sprinkle half of the chopped basil and green onions over the vegetables.
  6. Cover the skillet with a lid and cook for another 4-5 minutes until the vegetables are heated through and the crust is cooked. Remove from the skillet and repeat with the remaining batter and vegetable mix to create the second pizza.
