- Mushrooms - 100g, sliced
- Cherry tomatoes - 100g, halved
- Fresh basil - 10g, chopped
- Soy sauce - 1 tbsp
- Chili flakes - 1/2 tsp (optional)
- Green onions - 2 stalks, chopped
Steps
- In a mixing bowl, combine rice flour, tapioca starch, water, and salt to create a smooth batter. Let it rest for 10 minutes.
- In a non-stick skillet, heat 1 tablespoon of vegetable oil over medium heat. Add minced garlic and sliced onions, sautéing until fragrant and translucent.
- Add bell pepper and mushrooms to the skillet, cooking for another 5 minutes until they soften. Stir in cherry tomatoes and cook for an additional 2 minutes. Season with soy sauce and chili flakes if using, then remove from heat.
- In a separate non-stick or well-greased skillet, pour half of the batter and spread it evenly to form a thin crust. Cook for about 4-5 minutes until the bottom is golden brown and crispy.
- Carefully flip the crust and layer half of the vegetable mix on top. Sprinkle half of the chopped basil and green onions over the vegetables.
- Cover the skillet with a lid and cook for another 4-5 minutes until the vegetables are heated through and the crust is cooked. Remove from the skillet and repeat with the remaining batter and vegetable mix to create the second pizza.
