Ingredients

  • Rice noodles - 200 grams
  • Halal chicken breast - 150 grams, sliced
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Broccoli florets - 100 grams
  • Garlic - 3 cloves, minced
  • Soy sauce - 3 tablespoons
  • Oyster sauce (halal) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the rice noodles in warm water for about 15 minutes or until softened, then drain and set aside.
  2. In a large pan or wok, heat vegetable oil over medium-high heat. Add minced garlic and sauté until fragrant.
  3. Add the sliced halal chicken breast to the pan, cooking until browned and cooked through, about 5-7 minutes.
  4. Stir in the sliced bell pepper, julienned carrot, and broccoli florets. Cook for an additional 3-4 minutes until vegetables are tender but still crisp.
  5. Add the soaked rice noodles to the pan along with soy sauce, oyster sauce, sesame oil, salt, and black pepper. Toss everything together and stir-fry for about 2-3 minutes until heated through and well combined.
  6. Remove from heat and garnish with chopped green onions before serving.
