Ingredients

  • Rice noodles - 200 grams

  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Tofu - 150 grams, firm, cubed
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Fresh basil leaves - 1/2 cup, torn
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the rice noodles according to package instructions until tender, then drain and set aside.
  2. In a large pot, heat sesame oil over medium heat and add the sliced mushrooms. Sauté for 5 minutes until softened.
  3. Add the julienned carrot and zucchini to the pot, stirring occasionally for another 3-4 minutes.
  4. Pour in the vegetable broth, and add the soy sauce, salt, and pepper to taste. Bring the mixture to a gentle simmer.
  5. Add the cubed tofu to the pot and cook for an additional 5 minutes, allowing the flavors to meld.
  6. In bowls, place a portion of the cooked rice noodles, and ladle the hot broth and vegetables over the noodles.
  7. Garnish with fresh basil and cilantro, and serve with lime wedges on the side.
