- Fresh basil leaves - 1/2 cup, torn
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges

Steps
- Cook the rice noodles according to package instructions until tender, then drain and set aside.
- In a large pot, heat sesame oil over medium heat and add the sliced mushrooms. Sauté for 5 minutes until softened.
- Add the julienned carrot and zucchini to the pot, stirring occasionally for another 3-4 minutes.
- Pour in the vegetable broth, and add the soy sauce, salt, and pepper to taste. Bring the mixture to a gentle simmer.
- Add the cubed tofu to the pot and cook for an additional 5 minutes, allowing the flavors to meld.
- In bowls, place a portion of the cooked rice noodles, and ladle the hot broth and vegetables over the noodles.
- Garnish with fresh basil and cilantro, and serve with lime wedges on the side.
