Ingredients

  • whole wheat flour - 150 grams
  • warm water - 80 ml
  • instant yeast - 5 grams
  • olive oil - 10 ml
  • salt - 2 grams
  • cooked chicken breast, shredded - 100 grams
  • bell pepper, diced - 50 grams
  • onion, finely chopped - 30 grams
  • spinach, chopped - 30 grams
  • low-fat mozzarella cheese, shredded - 50 grams
  • soy sauce - 10 ml
  • black pepper - 1 gram
  • fresh basil, chopped - 5 grams

Steps

  1. In a mixing bowl, combine whole wheat flour, instant yeast, salt, warm water, and olive oil. Knead until a smooth dough forms, then let it rest for 15 minutes covered with a damp cloth.
  2. While the dough is resting, heat a non-stick skillet over medium heat. Add the onion and bell pepper, sauté for 3-4 minutes until softened.
  3. Add the shredded chicken, spinach, soy sauce, and black pepper to the skillet. Cook for an additional 2-3 minutes until heated through. Remove from heat and let cool slightly.
  4. Preheat your oven to 220°C (428°F). Once the dough has rested, roll it out into two round pizzas about 0.5 cm thick.
  5. Transfer the rolled-out dough to a baking sheet lined with parchment paper. Spread the chicken and vegetable mixture evenly over each pizza, leaving a small border around the edges.
  6. Sprinkle shredded mozzarella cheese over the top of the pizzas, followed by fresh basil.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the cheese is bubbly.
  8. Remove from the oven, allow to cool for a couple of minutes, slice, and serve hot.
