Ingredients

  • Whole wheat flour - 150 grams
  • Vital wheat gluten - 30 grams
  • Warm water - 120 ml
  • Instant yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Cooked chicken breast, shredded - 100 grams
  • Mozzarella cheese, shredded - 100 grams
  • Vietnamese sausage (chả lụa), sliced - 50 grams
  • Red bell pepper, diced - 50 grams
  • Green onion, chopped - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon

Steps

  1. In a large mixing bowl, combine whole wheat flour, vital wheat gluten, salt, and instant yeast. Mix well.
  2. Slowly add warm water and olive oil to the dry ingredients, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Place it in a greased bowl, cover, and let it rise in a warm place for 30 minutes.
  4. Preheat your oven to 220°C (428°F).
  5. Once the dough has risen, punch it down and roll it out into a 25 cm (10 inch) diameter round on a floured surface.
  6. Transfer the rolled dough to a baking sheet lined with parchment paper.
  7. In a bowl, mix the shredded chicken, mozzarella cheese, sliced Vietnamese sausage, diced red bell pepper, chopped green onion, soy sauce, and black pepper until well combined.
  8. Spread the filling mixture evenly over the pizza dough, leaving a small border around the edges.
  9. Sprinkle sesame seeds on top of the filling for added texture and flavor.
  10. Bake in the preheated oven for 15-20 minutes or until the crust is golden and the cheese is melted and bubbly.
