Ingredients

  • Firm tofu - 200 grams
  • Mango - 1 medium, ripe
  • Cucumber - 1 small, thinly sliced
  • Carrot - 1 small, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Vegan mayonnaise - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Baguette - 2 small
  • Vegetable oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 1 cm thick slices.
  2. In a bowl, mix soy sauce, lime juice, salt, and black pepper. Marinate the tofu slices in this mixture for 10 minutes.
  3. Heat vegetable oil in a non-stick skillet over medium heat. Add the marinated tofu slices and cook for 4-5 minutes on each side until golden brown.
  4. While the tofu is cooking, prepare the mango by peeling and slicing it into thin strips.
  5. Once the tofu is cooked, slice the baguettes in half lengthwise but do not cut all the way through.
  6. Spread vegan mayonnaise inside each baguette, then layer on the cooked tofu, mango strips, cucumber slices, carrot, and chopped cilantro.
  7. Close the baguettes, slice in half if desired, and serve immediately.
