Ingredients
- Firm tofu - 200 grams
- Mango - 1 medium, ripe
- Cucumber - 1 small, thinly sliced
- Carrot - 1 small, julienned
- Fresh cilantro - 1/4 cup, chopped
- Vegan mayonnaise - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Baguette - 2 small
- Vegetable oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1 cm thick slices.
- In a bowl, mix soy sauce, lime juice, salt, and black pepper. Marinate the tofu slices in this mixture for 10 minutes.
- Heat vegetable oil in a non-stick skillet over medium heat. Add the marinated tofu slices and cook for 4-5 minutes on each side until golden brown.
- While the tofu is cooking, prepare the mango by peeling and slicing it into thin strips.
- Once the tofu is cooked, slice the baguettes in half lengthwise but do not cut all the way through.
- Spread vegan mayonnaise inside each baguette, then layer on the cooked tofu, mango strips, cucumber slices, carrot, and chopped cilantro.
- Close the baguettes, slice in half if desired, and serve immediately.
