- Ground pork - 200 grams
- Shallots - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fish sauce - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Sugar - 1 teaspoon
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
- Baguette - 2 small
- Cucumber - 1/2, thinly sliced
- Carrot - 1 small, julienned
- Daikon radish - 1 small, julienned
- Rice vinegar - 2 tablespoons
- Fresh cilantro - a handful
- Fresh mint - a handful
- Chili sauce - to taste
Steps
- In a bowl, combine ground pork, chopped shallots, minced garlic, fish sauce, black pepper, sugar, cornstarch, and water. Mix well until all ingredients are fully combined.
- Shape the pork mixture into small meatballs, about 2.5 cm in diameter.
- Heat a non-stick skillet over medium heat and add a small amount of oil. Cook the meatballs for about 10-12 minutes, turning occasionally until they are browned and cooked through.
- While the meatballs are cooking, prepare the pickled vegetables by mixing the julienned carrot and daikon radish with rice vinegar. Let them sit for at least 10 minutes.
- Slice the baguettes in half lengthwise, leaving a hinge. Lightly toast them in the skillet for a couple of minutes until crispy.
- Assemble the bánh mì by placing the cooked meatballs inside the baguette, followed by slices of cucumber, pickled carrots and daikon, fresh cilantro, and mint. Drizzle with chili sauce to taste.
