Ingredients

  • Rice noodles - 200 grams
  • Halal chicken breast - 150 grams, sliced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Soak the rice noodles in warm water for about 15 minutes or until softened, then drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced Halal chicken breast to the pan and cook for 5-7 minutes until fully cooked and slightly browned.
  4. Stir in the julienned carrot and sliced bell pepper, cooking for an additional 3-4 minutes until the vegetables are tender yet crisp.
  5. Add the soaked rice noodles to the pan along with soy sauce, oyster sauce, and black pepper. Toss everything together to combine and heat through, about 2-3 minutes.
  6. Remove from heat and stir in the chopped green onions. Serve hot, garnished with fresh cilantro and lime wedges on the side.
