Ingredients

  • Mung beans - 100 grams
  • Bread crumbs - 50 grams
  • Carrot - 50 grams, grated
  • Cucumber - 50 grams, thinly sliced
  • Red bell pepper - 50 grams, thinly sliced
  • Fresh cilantro - 20 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - for frying
  • Baguette - 2 pieces
  • Pickled daikon - 50 grams (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the mung beans and soak them in water for 3-4 hours. Drain and steam the soaked beans for 15 minutes until tender.
  2. In a mixing bowl, combine the steamed mung beans, bread crumbs, grated carrot, minced garlic, soy sauce, sesame oil, chopped cilantro, and mint. Mash the mixture until it holds together but still has some texture.
  3. Form the mixture into patties, about 1.5 cm thick. Season both sides with salt and black pepper.
  4. Heat vegetable oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
  5. While the patties are cooking, prepare the baguettes by slicing them open and toasting them lightly, if desired.
  6. Once the patties are done, assemble the bánh mì by placing a mung bean patty inside each baguette. Top with sliced cucumber, red bell pepper, and pickled daikon. Add more cilantro and mint if desired.
