Ingredients

  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Vegetable oil - 2 tablespoons
  • Baguette - 2 pieces
  • Cucumber - 1 small, sliced
  • Carrot - 1 medium, julienned
  • Daikon radish - 100 grams, julienned
  • Fresh cilantro - a handful
  • Sriracha sauce - to taste
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Press the tofu to remove excess moisture, then cut it into 1 cm thick slices.
  2. In a bowl, whisk together soy sauce, maple syrup, rice vinegar, minced garlic, and grated ginger.
  3. Marinate the tofu slices in the sauce for at least 15 minutes.
  4. Heat 1 tablespoon of vegetable oil in a pan over medium heat. Once hot, add the tofu slices and cook for about 4-5 minutes on each side until golden brown.
  5. While the tofu is cooking, prepare the vegetables by slicing the cucumber, julienning the carrot and daikon, and washing the cilantro.
  6. In a separate bowl, mix vegan mayonnaise with a bit of sriracha sauce to taste.
  7. Slice the baguettes open lengthwise and lightly toast them if desired.
  8. Spread the spicy vegan mayonnaise on both sides of the baguette, then layer with cooked tofu, cucumber, carrot, daikon, and fresh cilantro.
  9. Close the baguette and cut it in half. Serve immediately with extra sriracha on the side if desired.
