Ingredients
- Firm tofu - 200 grams
- Soy sauce - 2 tablespoons
- Maple syrup - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Vegetable oil - 2 tablespoons
- Baguette - 2 pieces
- Cucumber - 1 small, sliced
- Carrot - 1 medium, julienned
- Daikon radish - 100 grams, julienned
- Fresh cilantro - a handful
- Sriracha sauce - to taste
- Vegan mayonnaise - 2 tablespoons
Steps
- Press the tofu to remove excess moisture, then cut it into 1 cm thick slices.
- In a bowl, whisk together soy sauce, maple syrup, rice vinegar, minced garlic, and grated ginger.
- Marinate the tofu slices in the sauce for at least 15 minutes.
- Heat 1 tablespoon of vegetable oil in a pan over medium heat. Once hot, add the tofu slices and cook for about 4-5 minutes on each side until golden brown.
- While the tofu is cooking, prepare the vegetables by slicing the cucumber, julienning the carrot and daikon, and washing the cilantro.
- In a separate bowl, mix vegan mayonnaise with a bit of sriracha sauce to taste.
- Slice the baguettes open lengthwise and lightly toast them if desired.
- Spread the spicy vegan mayonnaise on both sides of the baguette, then layer with cooked tofu, cucumber, carrot, daikon, and fresh cilantro.
- Close the baguette and cut it in half. Serve immediately with extra sriracha on the side if desired.
