Ingredients

  • Baguette - 2 pieces (approximately 25 cm each)
  • Halal bacon - 150 grams
  • Cucumber - 1 medium, sliced thinly
  • Carrot - 1 medium, julienned
  • Daikon radish - 50 grams, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Mayonnaise - 2 tablespoons
  • Sriracha sauce - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat a skillet over medium heat and cook the Halal bacon until crispy, about 8-10 minutes. Remove and drain on paper towels.
  2. While the bacon is cooking, prepare the pickled vegetables by mixing the julienned carrot and daikon radish with lime juice, salt, and a pinch of sugar. Let sit for about 10 minutes.
  3. Slice the baguettes lengthwise, leaving one side attached to create a pocket.
  4. Spread mayonnaise on one side of each baguette and drizzle Sriracha sauce on the other side according to your spice preference.
  5. Layer the crispy bacon, cucumber slices, pickled carrots, daikon, and chopped cilantro inside each baguette.
  6. Drizzle soy sauce over the fillings and sprinkle with salt and pepper to taste.
  7. Close the baguettes and serve immediately while the bacon is still warm.
