  • Cucumber - 1 small, thinly sliced
  • Pickled daikon radish - 50g
  • Pickled carrot - 50g
  • Fresh cilantro - a handful
  • Jalapeño or chili pepper - 1, thinly sliced (optional)
  • Mayonnaise - 2 tablespoons
  • Soy sauce - 1 teaspoon
  • Lime juice - 1 teaspoon
  • Salt - to taste

Steps

  1. Prepare the pickled daikon and carrot by mixing them with 1 tablespoon of lime juice and a pinch of salt. Let them marinate for at least 10 minutes.
  2. While the pickles marinate, slice the baguette lengthwise, being careful not to cut all the way through.
  3. Spread mayonnaise inside the baguette, then drizzle with soy sauce.
