Ingredients

  • Pork shoulder - 250 grams
  • Soy sauce - 2 tablespoons
  • Honey - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Black pepper - 1 teaspoon
  • Vietnamese baguette - 2 pieces
  • Cucumber - 1/2, thinly sliced
  • Carrot - 1 medium, julienned
  • Daikon radish - 50 grams, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Jalapeño - 1 small, sliced (optional)
  • Mayonnaise - 2 tablespoons
  • Lime - 1, cut into wedges
  • Salt - to taste

Steps

  1. In a bowl, combine soy sauce, honey, minced garlic, black pepper, and salt to create a marinade.
  2. Cut the pork shoulder into thin slices and marinate in the mixture for at least 15 minutes.
  3. While the pork is marinating, prepare the vegetables by slicing the cucumber, julienning the carrot and daikon radish, and chopping the cilantro.
  4. Heat a skillet over medium heat and cook the marinated pork for about 10-12 minutes, or until fully cooked and slightly caramelized.
  5. While the pork is cooking, preheat the baguettes in the oven for about 5 minutes or until crusty.
  6. Spread mayonnaise inside each baguette and layer with cooked pork, cucumber, carrot, daikon, jalapeño, and cilantro.
  7. Serve with lime wedges on the side for drizzling over the sandwich.
