- Pork shoulder - 250 grams
- Soy sauce - 2 tablespoons
- Honey - 1 tablespoon
- Garlic - 2 cloves, minced
- Black pepper - 1 teaspoon
- Vietnamese baguette - 2 pieces
- Cucumber - 1/2, thinly sliced
- Carrot - 1 medium, julienned
- Daikon radish - 50 grams, julienned
- Fresh cilantro - 1/4 cup, chopped
- Jalapeño - 1 small, sliced (optional)
- Mayonnaise - 2 tablespoons
- Lime - 1, cut into wedges
- Salt - to taste
Steps
- In a bowl, combine soy sauce, honey, minced garlic, black pepper, and salt to create a marinade.
- Cut the pork shoulder into thin slices and marinate in the mixture for at least 15 minutes.
- While the pork is marinating, prepare the vegetables by slicing the cucumber, julienning the carrot and daikon radish, and chopping the cilantro.
- Heat a skillet over medium heat and cook the marinated pork for about 10-12 minutes, or until fully cooked and slightly caramelized.
- While the pork is cooking, preheat the baguettes in the oven for about 5 minutes or until crusty.
- Spread mayonnaise inside each baguette and layer with cooked pork, cucumber, carrot, daikon, jalapeño, and cilantro.
- Serve with lime wedges on the side for drizzling over the sandwich.
