Ingredients

  • Baguette - 2 pieces
  • Chicken breast - 200 grams
  • Soy sauce - 2 tablespoons
  • Honey - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Black pepper - 1 teaspoon
  • Cucumber - 1/2, thinly sliced
  • Carrot - 1 medium, julienned
  • Daikon radish - 50 grams, julienned
  • Fresh cilantro - a handful
  • Mayonnaise - 2 tablespoons
  • Sriracha sauce - 1 tablespoon
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. In a bowl, mix soy sauce, honey, minced garlic, black pepper, and lime juice to create a marinade.
  2. Add the chicken breast to the marinade, ensuring it's fully coated. Let it marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables: thinly slice the cucumber, julienne the carrot and daikon radish, and chop the cilantro.
  4. Heat a skillet over medium heat. Once hot, add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked through and golden brown.
  5. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into thin strips.
  6. In a small bowl, mix mayonnaise and sriracha sauce to create a spicy mayo.
  7. Slice the baguettes in half lengthwise without cutting all the way through. Lightly toast them in the same skillet for about 1-2 minutes.
  8. Spread the spicy mayo on both sides of the baguette. Layer in the sliced chicken, cucumber, carrot, daikon, and cilantro.
  9. Close the baguette and serve immediately, garnished with additional cilantro if desired.
