Ingredients

  • Egg - 1 large
  • Cornstarch - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baguette - 2 small (French-style)
  • Cucumber - 1/2, thinly sliced
  • Carrot - 1 medium, julienned
  • Daikon radish - 1/2 medium, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Mayonnaise - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili sauce - to taste

Steps

  1. In a food processor, combine the shrimp, garlic, shallot, egg, cornstarch, fish sauce, sugar, and black pepper. Blend until a smooth mixture forms.
  2. Shape the shrimp mixture into patties, about 5 cm in diameter.
  3. Preheat a grill or grill pan over medium-high heat. Cook the shrimp patties for about 3-4 minutes on each side, or until they are cooked through and slightly charred.
  4. While the patties are cooking, prepare the baguettes by slicing them open lengthwise, without cutting all the way through.
  5. Mix the mayonnaise with lime juice and spread it evenly inside each baguette.
  6. Once the patties are done, place one shrimp patty inside each baguette.
  7. Top with cucumber slices, julienned carrot, daikon radish, cilantro, and mint.
  8. Drizzle chili sauce over the top according to your spice preference.
  9. Close the baguettes and serve immediately, enjoying the fresh crunch and flavorful shrimp.
