- Cornstarch - 2 tablespoons
- Fish sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baguette - 2 small (French-style)
- Cucumber - 1/2, thinly sliced
- Carrot - 1 medium, julienned
- Daikon radish - 1/2 medium, julienned
- Fresh cilantro - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Mayonnaise - 2 tablespoons
- Lime juice - 1 tablespoon
- Chili sauce - to taste
Steps
- In a food processor, combine the shrimp, garlic, shallot, egg, cornstarch, fish sauce, sugar, and black pepper. Blend until a smooth mixture forms.
- Shape the shrimp mixture into patties, about 5 cm in diameter.
- Preheat a grill or grill pan over medium-high heat. Cook the shrimp patties for about 3-4 minutes on each side, or until they are cooked through and slightly charred.
- While the patties are cooking, prepare the baguettes by slicing them open lengthwise, without cutting all the way through.
- Mix the mayonnaise with lime juice and spread it evenly inside each baguette.
- Once the patties are done, place one shrimp patty inside each baguette.
- Top with cucumber slices, julienned carrot, daikon radish, cilantro, and mint.
- Drizzle chili sauce over the top according to your spice preference.
- Close the baguettes and serve immediately, enjoying the fresh crunch and flavorful shrimp.
