- Firm tofu - 200 grams
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Cornstarch - 2 tablespoons
- Vegetable oil - 2 tablespoons (for frying)
- French baguette - 2 pieces
- Cucumber - 1 small, thinly sliced
- Carrot - 1 medium, julienned
- Daikon radish - 100 grams, julienned
- Fresh cilantro - 1/4 cup, chopped
- Vegan mayonnaise - 4 tablespoons
- Sriracha - 1 tablespoon (optional)
Steps
- Press the tofu between paper towels to remove excess moisture for about 15 minutes.
- In a bowl, mix soy sauce, lime juice, minced garlic, and marinated tofu for 10 minutes.
- Coat the marinated tofu with cornstarch evenly.
- Heat vegetable oil in a frying pan over medium heat and fry the tofu until golden brown on both sides, about 3-4 minutes per side.
- While the tofu is frying, prepare the baguettes by slicing them open lengthwise without cutting all the way through.
- Spread vegan mayonnaise on the inside of each baguette.
- Once the tofu is cooked, place it inside the baguette, add sliced cucumber, julienned carrot, daikon radish, and chopped cilantro.
- Drizzle with Sriracha if desired, then close the baguette and serve immediately.
