Ingredients

  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 2 tablespoons (for frying)
  • French baguette - 2 pieces
  • Cucumber - 1 small, thinly sliced
  • Carrot - 1 medium, julienned
  • Daikon radish - 100 grams, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Vegan mayonnaise - 4 tablespoons
  • Sriracha - 1 tablespoon (optional)

Steps

  1. Press the tofu between paper towels to remove excess moisture for about 15 minutes.
  2. In a bowl, mix soy sauce, lime juice, minced garlic, and marinated tofu for 10 minutes.
  3. Coat the marinated tofu with cornstarch evenly.
  4. Heat vegetable oil in a frying pan over medium heat and fry the tofu until golden brown on both sides, about 3-4 minutes per side.
  5. While the tofu is frying, prepare the baguettes by slicing them open lengthwise without cutting all the way through.
  6. Spread vegan mayonnaise on the inside of each baguette.
  7. Once the tofu is cooked, place it inside the baguette, add sliced cucumber, julienned carrot, daikon radish, and chopped cilantro.
  8. Drizzle with Sriracha if desired, then close the baguette and serve immediately.
