- Shrimp - 200 grams, peeled and deveined
- Panko breadcrumbs - 50 grams
- Egg - 1 large
- Garlic - 2 cloves, minced
- Lemongrass - 1 stalk, finely chopped
- Cilantro - 2 tablespoons, chopped
- Fish sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2, Halal
- Mayonnaise - 2 tablespoons
- Sriracha - 1 tablespoon
- Cucumber - 1/2, thinly sliced
- Carrot - 1/2, julienned
- Red onion - 1/4, thinly sliced
- Lettuce leaves - 2, for garnish
Steps
- In a food processor, combine the shrimp, panko breadcrumbs, egg, garlic, lemongrass, cilantro, fish sauce, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
- Form the shrimp mixture into two equal-sized patties and refrigerate for about 10 minutes to firm up.
- Heat a non-stick skillet over medium heat and add a drizzle of oil. Cook the shrimp patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
- While the patties are cooking, mix the mayonnaise and sriracha in a small bowl to create a spicy sauce.
- To assemble the burger, spread the spicy mayo on the bottom half of each burger bun. Layer with lettuce, the shrimp patty, cucumber slices, julienned carrot, and red onion. Top with the other half of the bun.
- Serve immediately with a side of your choice.
