  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Cilantro - 1/4 cup, chopped
  • Cucumber - 1 small, thinly sliced
  • Carrot - 1 small, julienned
  • Daikon radish - 1 small, julienned
  • Mayonnaise - 2 tablespoons
  • Sriracha sauce - 1 teaspoon
  • Salt - to taste

Steps

  1. In a bowl, combine minced garlic, soy sauce, fish sauce, brown sugar, black pepper, and lime juice to make a marinade.
  2. Add the pork ribs to the marinade, ensuring they are well coated. Let marinate for at least 15 minutes.
  3. While the ribs are marinating, prepare the pickled vegetables by mixing the julienned carrot and daikon radish with a pinch of salt and a tablespoon of lime juice. Let sit for 10 minutes.
  4. Preheat a grill or grill pan over medium-high heat. Grill the marinated pork ribs for about 5-7 minutes on each side, or until cooked through and nicely charred.
  5. While the ribs are grilling, slice the baguettes in half lengthwise and lightly toast them on the grill.
  6. Mix the mayonnaise and sriracha sauce in a small bowl to create a spicy mayo.
  7. Once the pork ribs are done, slice them into manageable pieces and assemble the burgers by spreading spicy mayo on the toasted baguette, layering with pork, cucumber slices, pickled vegetables, and chopped cilantro.
