- Tomato sauce - 100g
- Vegan mozzarella cheese - 100g
- Red bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Cucumber - 1/2 medium, thinly sliced
- Fresh cilantro - 1/4 cup, chopped
- Lime juice - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sriracha - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Cut the baguette in half lengthwise and place it on a baking sheet.
- In a small bowl, mix olive oil and minced garlic, then brush this mixture onto the cut sides of the baguette.
- Spread the tomato sauce evenly over each half of the baguette.
- Sprinkle the vegan mozzarella cheese generously over the sauce.
- Top with sliced red bell pepper, julienned carrot, and cucumber slices.
