Ingredients

  • Baguette - 1 large (about 200g)
  • Mozzarella cheese - 100g, shredded
  • Cream cheese - 50g
  • Cucumber - 1 small, thinly sliced
  • Fresh cilantro - 10g, chopped
  • Pickled carrots - 50g
  • Mayonnaise - 2 tablespoons
  • Sriracha sauce - 1 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the baguette lengthwise, without cutting all the way through, to create a pocket.
  3. In a small bowl, mix the cream cheese with salt and black pepper to taste.
  4. Spread the cream cheese mixture evenly inside the baguette.
  5. Layer the shredded mozzarella cheese over the cream cheese.
  6. Place the baguette on a baking sheet and bake in the preheated oven for about 8-10 minutes, or until the cheese is melted and bubbly.
  7. While the baguette is baking, prepare the fresh vegetables: slice the cucumber and chop the cilantro.
  8. Once the baguette is done, remove it from the oven and let it cool slightly.
  9. Spread mayonnaise on the inside of the baguette and drizzle with Sriracha sauce if using.
  10. Fill the baguette with the sliced cucumbers, pickled carrots, and fresh cilantro.
  11. Cut the sandwich in half and serve immediately.
